You can find a poo only bulk grow or two in the bulk-related stuff on this site.
As for how to pasteurize, heat your material in an oven (essentially, bake it) at about 170 degrees for a few hours. This works for straw or poo.

Don't take my word for it or anything, but there's no reason you need to add straw. Most people seem to do it because it adds good structure to your substrate, which may help the mycelium colonize it faster and perform better generally. Some people swear by straight poo, and are adamant that it has a property of resisting contamination. Others swear by the the yields that straw can produce and the relative ease with which it can be dunked. Others say dunking straw is pointless...
And lime is just to balance the pH, you don't need to add it until after pasteurization as far as I know. A lot of people use peat moss which is acidic and so add lime to get the pH back into a good neutralish range which mushrooms like.

If by "FRESH" you meant freshly TAKEN from a feild then yes you want fresh manure.
If you can get some manure form one of these....
an old large horse.
See the white stuff in the poo thats good. Nature has been working on this poo
You want OLD, dry crusty , full of white fuzz stuff poo. thats the "GOOD SHIT"
So find a horse or run out to a feild there is no time like the present(dont forget a large bag)
For your info.....I have watched poo from Worm Cow and this Horse for awhile now and the old horse poo is amazing, the mycelium cant get enough of it

Composted cow manure works great -- that's the stuff most stores sell.

NO , but you dont want FRESH manure.
And if you can get it yourself, PERSONALLY I havent ever found "quality" crap,I have only found "composted" cow poo that seems to SUCK.
Old poo thats been sitting for months and is full of that white fuzz is perfect, but if you cant get that straight out of the bag manure (worm, cow) will work.
But at least make sure its been composted for awhile, if it hasent you will have to "leach" it.

Out of many bags of compost, composted manure, and dehydrated manure, I have only come across one bag with at least desirable results. A few other times, it was barely okay, and most failed badly. I even noticed differences between batches from the same company. Bagged shit sucks (unless your lucky)at least in the N.E. USA!!
Find some horses. If the shits not dry, lay it in the yard for a few days until it is...

What you want is wheat or barley straw. It should be a kinda golden brown. It shouldn't be hay, and it shouldn't be alfalfa, which is almost always green.
