Wouldn't resterilizing the jars dry out the cakes. If the jars have holes in the top, what's to stop water from escaping in the form of steam? Even if it is covered by foil, steam is a very power thing, and the pressure that comes with it would force it out of the jars. Just a thought, no solid idea as to if it will happen or not.

I feel cheated, where can I get the stuff that makes eggs look like brains?

Yeah, that's a good point, but I figure as long as the jars aren't in direct contact with the heat source, moisture loss should be minimal.
