Wow, i thought they would be bigger than this... So now what do I do with them? They aren't very good raw ... Should I harvest the stem too? Should I saute them in something? Can they be stored somehow? Are they good dried? Let me know

Pan fry dry with out oil till they start to brown. Once most moisture cooks away add some oil, pepper, red pepper flakes, and salt. Fry till you tink they are done add some garlic and fry a little longer.

Those bigger ones look like they could go another day or 2 to me, when the cap is about to lose that little curve at the tips of the gills they definitely need picked. Like the ones on the left in this pic. The ones on the right went a little too long but they're still fine. As for cooking them, I only use the caps, they're good in stir fries, floured/battered and fried, cooked up on their own with some garlic, ginger and soy sauce, or with pretty much any other mushroom recipe. DH

Eh, It's enjoyable but it just feel right because I didn't start it from scratch.. Hopefully i can find some cultures soon (still looking) and get some started the real way. I feel like such a poser.

Actually, I just got a few in the mail.. They are kinda smushed though.. I think i will be able to work with it still. I am sure I will actually, just going to have to be carefull and sterile.
I LOVE OYSTER MUSHROOMS! I have eaten the entire first flush all myself already.. I read that it is a very bad idea to eat raw.. Why is this?

Alkaloidaholic: I have send them away last week. But usually it takes about 2 weeks till they arrive in the US. And here have been some holidays - so it might take a bit longer.

I have never heard that eating raw oysters is harmful and I have eaten some of them raw myself. But I am not sure it this is true ? At least it did not do any harm to me
