being a newbie and all, you'll have to excuse my dumb question.... would you guys recommend a PC or just boiling them for an hour in a pot with a lid?? isn't there a good chance of overdrying(overcooking) them in a PC as opposed to a slow boil?

sure you can over cook in a pc the same as boiling thats why there are set times to cook jars!

i've only produced 4 times. the first three times i used a PC and had great results (all jars ok). last time i was told to use a pot with lid and about half went sour. i thought it was due to mold. the reason i swithed was because my PC doesnt have a PSI gauge and i didnt want to over cook. thanks for the advice MD.

I heartily recommend a PC. It's the best option for sterilization, because it'll reach a higher temperature than a pot of boiling water will, and it'll raise the temperature of everything inside of it to the temperature of the steam. A pot of boiling water won't do this as reliably.
As to drying ... no, it shouldn't overdry them. You have to remember that the atmosphere inside of a PC, if you started it up right, is pure steam. This, combined with the pressure regulation system, means that it's almost impossible to dry out something with a PC. As a matter of fact, having the things get too moist can be a problem -- that's why you cover the tops of the jars with aluminum foil when you PC 'em.

any AA model is fantastic, easy to repair if there is a problem, and uasy to use... I have a 925x and a 921... always buy the largest you can afford and will fit your stove (no AA 975 unless you're doing it outside) at the time... it saves you the wishing you had a larger one when you sterilize instruments as well as substrait

Work at a vet clinic, i just use the one where i work at, i can fit about 10 all standing up, but then again its an Extremely large autoclave, even for a vet clinic.

I bought an 18qt presto....soooo much cheaper than an all american and I've never had a single problem with it....I love it and wouldn't trade it for any other kind at this point
EDIT: JUST big enough to fit 4 2 qt jars which I love...I use pretty much all 2 qts now accept when testing out a new syringe
