Moisture in vacuume sealed bag
    #27816100 - 06/12/22 01:24 PM (2 years, 7 months ago)

Had some truffles delivered from Wholecelieum a few weeks ago. Been storing then in a jar in the fridge on a stack of rice.  Does this mean they've gone bad?

Not enough info, pics needed. Also you don't need to store dried mushrooms/truffles in the fridge, room temp in an airtight container in a dark cupboard or drawer is ideal. The thing that degrades potency over time is moisture from the air getting into the dry material and exposure to UV light. The fridge/freezer isn't even desirable because of temp swings and condensation that can create problems in enough cases that it's not advisable. Room temp in the future.

Most truffles come fresh not dried. And refrigeration is the recommended storage method.

Edit: it says directly on their site that they should be stored at 4°C and theyre good for 2 months if you dont open the package and theyre good for 2 weeks if you do.

I didn't know that, silly me for assuming lol

So all the truffles sold in Amsterdam come fresh? I would not enjoy the added component of having to manage a psychedelic operation like a produce department manager. :/

Although having said that, even the dry ones don't hang around for long, so I guess it'd be easy enough to get down.
