Gourmet Shroom Chocolates * 3

Im really excited to make my first gourmet shroom chocolates. I just bought a bunch of ingredients for making 'em from the bulk store:

Milk Chocolate Melts
White Chocolate Melts (edit: do not use white chocolate!)
Butterscotch Chips
Reese's Peanut Butter Chips
Crushed Almonds
Chopped Walnuts
Honey-Roasted Peanut Halves
Rainbow Sprinkles

Im gonna be experimenting with all sorts of mixtures and flavors :awehigh:

Important Lessons Learned Thus Far:

Don't put coconut chunks in a coffee grinder! It will damage the coffee grinder. Buy shredded coconut or use a food processor instead. Shredded coconut inside of a coffee grinder is probably OK but i havent tried it yet.

Milk shroom chocolates do not age well. Make sure to store them well or eat them soon after making them. Id estimate they last about 1 month until they start tasting terrible.

Never use white chocolate! It tastes awful with shrooms mixed into it. Use only milk or dark chocolate.

Try to use as little chocolate as possible per X amount of powdered shrooms. This will make eating the chocolates easier. Ive found that 10 grams of chocolate per 1 gram of powder shrooms works well. Add 1-2 grams of chocolate at a time if more is needed to help with mixing ingredients.

Nuts do little to mask the shroom taste but they work great to help mask the texture of powdered shrooms.

Highly recommend buying an electric chocolate melter. Makes the whole process much easier. They freakin' rock! :awesomenod:

I learned a lot from these chocolates.

Lessons learned:

White chocolate tastes AWFUL with shrooms. Never again :nonono:

Using dark orange flavored chocolate was way too strong.

Its better to use name-brand chocolate than generic bulk chocolate. Lindt and Hersey's brand were my favorites. Cadbery did not melt very well.

Adding dried nuts seemed to help with the taste, as both internal additions as well as toppers. But it mostly helps with texturing.

The shelf-life for these shroom chocolates is about half a year. But I recommend eating them within a month.

Using a cupcake pan as a mold for the cooling shroom chocolates was very helpful. Using multiple cupcake paper liners helped a lot too.

Labelling the bottom of the paper liner with the grams of shrooms added was really helpful too.

Good tip Geo! I'll check em out.

So I was thinking of pairings and I have some great ideas. I could eat the shroomchocolate with fresh bananas or fresh strawberries. Then I thought, what if i added dried strawberries and/or bananas to the shroomchocolates themselves? Next time I make them, Im adding some dried fruits (no raisins thou!) and maybe even dried coconut. Might make for a nice additional use for my dehydrator :cool2:

I might make non-shroom white chocolates to pair with the milk shroomchocolates. Might be a good combo since white shroomchocolates is super nasty but without the shroom powder, I bet they are pretty good. Worth a try.

I also found a nice, generic two mini-pot electric chocolate melter. Its now on my to-buy list :yesnod:

Hrmm, I do like the idea of something a little chewy in there, like the shaved coconut meat and maybe dried fruits or nuts.  Could help mask the potential grittiness that the shrooms can impart to the chocolates, if they aren't really well powdered.

Yeah, my thoughts are adding more flavors and textures to make the chocolates more enjoyable to eat. The dried ingredients will be either crushed or chopped.

Today's the big day! I have all the things I need to make the 2nd round of Gourmet Shroom Chocolates.

Today, I have (in clockwise order, starting at the top) Milk Chocolate melting chips ("sampled" a little too many :lol:), semi-sweet melting chips, sliced almonds, crushed walnuts, dried pineapple, dried coconut, and dried banana chips. For my exotic ingredient, I have some Froot Loops (which i may or may not add this round).

Ordered this "jumbo" cupcake pan. They were not exaggerating! :eek:

Some trippy rainbow baker cupcake wrappers. :mushroom2:













And I got my new electric 2-pan chocolate melter too. Thing thing looks awesome! Gonna test it out now :yesnod:

Ha! So it turns out, I really didnt use the Froot Loops because the other chocolates I made came out so well! :awesome:

I'll post some pics soon. Conclusion? This WORKS! And it works WELL :awesomenod:

Only downside it seems is storage. I gotta get a vacuum sealer, which I currently do not own. Freshness matters with these shroom chocolates. An important lesson I learned with making these unique chocolates....

Rice crispys next! Did you do a proper temper? What's the dosage on your shroom cups? Since chocolate is fat soluble and it encapsulates the shroom powder, supposedly there's minimal potency loss from oxidation or water. Easily stored like regular chocolates wrapped in foil or Ziploc or freezer.

Ha! I actually dont like rice crispys. But Im gonna make that Froot Loop one soon.

I usually do 2-2.5grams per cupcake. I also made a 3gram one. That was powerful! Quite a bit to eat but still worth it. Im definitely gonna get some heavy-duty zip-locks until i can get a vacuum sealer.

I’ve found in my pysco-chocolatier experiments that a little milk will give it a pleasant fudge like consistency. It can be over done pretty easily so you have to watch out.
IMO, it’s easier and more pleasant to eat then regular harder cupcake tin-esque chocolates. I’ve also played around with a slightly larger silicone cube mold and that made proportions of chocolate to powder a little easier to keep consistent.

Also agree with the white chocolate assessment. Lol

My next experiment will be dipping dried fruits like strawberries, mangos, banana chips and papaya in the dose-measured shroom-chocolate mix then topping it with crushed nuts. Might be tasty :yesnod:

I have to say I'm glad you posted this because I thought about doing something similar, and white chocolate is my fav.

Have you heard or seen anything about putting shrooms in gummies, thoughts on flavour and viability ?

Ive never made gummies but its my understanding that u make a tea, reduce the water down then use that tea-water with a candy-gummy-jello mix (?).

Ive got an update. Ive come to realize milk chocolate might not be the best choice either. Ive noticed over time, it can make the shroom chocolates taste worst. I think its the milk content. I think im gonna stick with using less milk chocolate and more semi-sweet and dark chocolate on future chocolates i make.

Gameoverdan gave a great idea for the gummies: add them to the chocolate!

I already buy chocolate-covered gummy bears. They are great! Love em.  Thinking getting gummy bears or gummy Lifesavers, cut them into pieces, then add them to the mix.

Also i just remembered i used mini M&Ms onmy last batch a couple weeks ago. I didnt like it. Too much chocolate. Didnt add any new flavors. But they do look cool. Maybe as a topping only.

I still havent tried Frooty Loops. I wanna try that soon with the batch i got going. :mushroom2:

After many successful experiments, I am going to the next-level and using an experimental ingredient.

What I have learned thus far is any ingredient that has a strong taste works the best. So far, the best additions to the gourmet shroom chocolates have been powdered dry banana, powdered dry coconut and diced mango or pineapple. The crushed nuts I have added have little effect on masking the taste of the dried shrooms but they add some subtle tastes. But overall, the dried nuts add a nice texture and thats about it.

With my success with using dried fruits, I have decided to go synthetic with the taste of fruit.

At the store tonight, I bought 4 things: 2 types of chocolate chips (milk and semi-sweet), shredded sweet coconut and Fruit Bowl Jelly Belly Jelly Beans. My goal is to shred (powder?) the fruity jelly beans in my coffee grinder then mix it in with the shroom powder and chocolate. If i cant shred them, I'll probably just cut them into pieces with a knife. I may add some ground-up sweet coconut as well (coconut chunks almost broke my coffee grinder, best to avoid that form) but will have to likely add a little more chocolate to the whole mix, which i am OK with.

If i can successful "powder" the Jelly Beans and mix it into the chocolate, this could be a very effective/tasty Gourmet Shroom Chocolate. I still want to use dried powdered fruit but these Jelly Beans could be a worthy replacement for them.
