Calculating grain moisture content

In the aim to achieve around 50% moisture content in my grains, I'm traying calculate it.
Now in the book "The essential guide to cultivating mushrooms" they give this formula:

where you hydrate the grains, weight them, dry them in an oven and weigh them again.
This formula seems just plain wrong to me.
So if we define as follows:
- S: weight when soaked in water - W: weight of water - D: weight of dry material
Then we should have S = W + D when the grain is soaked.
The water content should be W/S
which we can rewrite
W/S = (S-D)/S = S/S-D/S = 1-D/S
So water content should be given by 1-D/S
So if we look at the formula given in the book then we can write it in the same way as
S/(S+D) = (W+D)/(W+2D)
Which is not agreeing with the formula I derived.
So when people talk about how the grains should have 50% water content, should I use the formula given in the book, or should I use the formula that I derived?
I would say that my formula is "right" based on how I understand this, but would just like to know wether there is some concencus and reasoning behind the other definition.

i just cook the wheat until when i cut one open there is no more white part in the center
I try not to do math in time off

You're making it more complicated then it needs to be really.
As long as the inside has moisture and the outside is dry it is good to go.
One of the most important things is making sure the outside is dry. This is what matters the most in my opinion, lot of people mess this step up. But rarely mess up having enough moisture on the inside.
I've let jars sit for many many weeks and the insides of the grains still had moisture.
