large clump in rye after pc
    #27809434 - 06/07/22 08:23 AM (2 years, 7 months ago)

2 out of 7 rye jar i sterilized came out with single huge clumps lol. the other one is much smaller but they both seem to be unbreakable. the other 5 look great. just took them out of the pc and are still warm to the touch. excessive rinsing, 18 hour soak, 2min boil then let sit until dry to the touch. loaded jars and sterilized for 3 hours. has anyone else had a similar issue?? thanks!

From the looks of some of the grains
and the starchy bits on the glass.

I would say perhaps you have too many
bursted grains. Their starchy soft centers
cooking and sticking together like glue.

With rye after the soak it's pretty hydrated
as is. So dont raging boil it. You're only
trying to get it hot enough so it will surface
evaporate dry. So be more gentle, a nice lower
simmer instead of a hot grain bursting boil.

yea makes sense. the rye ive been getting has broken berry chunks before i even soak/simmer. but im extra careful during the simmer not to let them get to the point where they start bursting. i dont even bring it to a boil, barely a simmer tbh. just thought it was strange that 5 others have zero clumps and that single jar has one soooo massive hah.

one of the other jars..

Yeah that one looks good. Hmm I dunno why
more bursted or stuck together in those
other ones.

What is your lid setup like?

thanks rumfor, yea who knows. i think ill try to let them dry even more before loading them in jars. i ddnt load them wet by any means but i think they could have prolly dried a bit more maybe. the lid setup is basic af, a hole with micropore over it…

Ok so lid setup is consistent across the jars
Yeah maybe surface drying more will help
with consistency. Rye gets mooshy easily if
wet in the PC. Try to get less bursted grains
if you can also maybe.
