Seeking recipe for garlic mustard,
    #27788621 - 05/22/22 06:54 PM (1 year, 8 months ago)

Anyone have a recipe for wild garlic mustard? I foraged some at the local disc golf course, and some curly dock, ramps, and dryad saddle. I feel like these can be combined together with something else to create something tasty, I'm just lacking imagination right now. Any suggestions? I used the ramps to make some bomb garlic bread and put them on a pizza with some dryad saddle and other things, also very tasty. Any help is appreciated.

I did a bit of googling and it's coming up with recipes like pesto. It seems like people add it to spicy flavors to add a bit of a tangy kick.

It might make a good pasta sauce?

Yeah I know some people make a sort of horseradish sauce from the roots, they do have a radish-like smell to them. I haven't tried cooking the garlic mustard yet, it has kind of a broccoli-like flavor with a slight bite to it, not bad. The curlydock tastes similar to wood sorrel, kind of a sweet flavor, better than lettuce. Honestly the ones I picked are just about dead now lol but it's growing everywhere, I'll go pick some more. I made some kick-ass burgers with some good grass-fed beef, bacon cooked with maple syrup, fresh chanterelles fried in butter with onion, topped with yellowdock leaves. Tasted amazing! Next time I'll try to use use bison or venison.

I read somewhere there are two kinds of heat, one from capsaicin but another found in horseradish is chemically different - that explains the weird 'tingly hot' feeling upon eating horseradish which of course isn't much like the hot pepper heat.

I just looked up the chemistry and it seems garlic mustard does contain the very same type of compounds responsible for horseradish heat, glucosinolates.

I initially didn't like it the first time I tried horseradish, but that was before I gave it a chance. Then I tried it again and I couldn't get enough, I cleared the whole side of horseradish.

Maybe you should try to do a basic cook of the roots and see what the taste is like? Make a sauce and try it on whatever you can. Everything I am reading suggests the flavor would be quite intriguing...

I can certainly try it out. Idk how much of a punch they pack compared to horseradish but it smells good at least. Maybe make a sauce for sandwiches or brats, or if it's pretty spicy it might go well with sushi or something.
