It's an invitro fruit, a little pin mushroom.
Happens when the jar is ready from time to time. Sometimes it can be a sign of a contam. The jar trying to fruit before it gets taken over.
Most likely it is fine. How are you going to fruit that jar? Water tub is a good option. I broke four of my cakes up and made a shoebox.

Edit: I would still dunk and roll. If you are going to leave that pin just be careful with it rolling.

I have a basic "kit" (basically a plastic box with pre-drilled holes) includes hydration/filters/lights etc.
I believe it uses perlite and some form of hydroponic humidifier.
My first project so I'm trying to keep it simple for better results

I'd be careful with that hydroponic humidifier. You can probably get away with just the wet perlite.
The humidifier might throw off conditions too much. Most of us around here think it is better to really really keep it simple. No fans, gadgets or anything extra really.

I have a few other jars that look fully covered and a few others with more than half the bottom covered.
I was trying to wait for the other few to finish and birth them all at once.
Is it okay to keep the pinning one in the jar a couple extra days or whatnot?

Yep no problem, let it ride. It might be a little harder to free it from the jar depending on how big that pin gets but no real worries there.
You really want more cakes closer together so I'm glad you have a few.

I read that you can add sterilized jars (not-inoculated) to the fruiting chamber and they will also grow? Is there any truth to that?
Could you do that with a jar inoculated but not showing signs yet? Or better to just let it develop separately?

I don't think there is any truth to putting an uninoculated jar next to an inoculated one and them both growing. Shit happens but it is so unlikely id say definitely skip that.
Also if the jar isn't fully colonized you are better just leaving it and letting it do its thing until it is done. I wouldn't birth it until it is finished.
You could top fruit the jar if it refuses to colonize fully. Just get some verm throw it on spray it down just a little with h2o and put a sandwich baggie on top of the jar. This is a last resort. I did this with a few straggler jars my first time.
