Will it work? Possibly, with enough talent you can grow shrooms on damn near anything.
Will it work well and be something you want to do time and time again? Very probably not.

The reason we throw out bread when it's moldy and cut off a piece of hard cheese in the same situation is porosity. All those little holes in the bread means things can spread through the material at a higher rate. This would probably mean it would colonize quicker but would also be more likely to contaminate.
