Correct way / order to load dirty items in flow and clean?

Getting back into cult..

Had good success rate in the past but could definitely make some improvements.

What I used to do was have my dirty Petris and ISO spray out of flow, to the side of the desk, then when I needed something I would move my chair back, lean over to grab the dirty items, spray them and my hands and load them into the flow.

I've just put together a wooden surface for my hood, so I now have much more working area - no more working on small racks.

I'm wondering if I'd be better off loading everything dirty into flow to begin with, including the spray bottle. Then wiping everything clean and keeping the spray bottle in flow.

Though I can't help but feel like once you've cleaned one item, bacteria could be blown off of the dirty items onto the just cleaned.

Not only that but having a spray bottle in the flow could be a pain in the ass if I wanted to pour a wall of plates for example.

What I do is turn my filter unit on then wipe the filter grill from the top wiping left to right working my way down. Then clean the table and bring my supplies one by one standing in the clean flow wiping one by one and placing in clean workspace

IMO Spraying items locks in that nasty contams and shit  into the water droplets . Why they use a spray bottle for the Sab everything sticks to the walls

. I prep about 20 napkins fold and pre soak them before I’m about to start some work.
Everything gets wiped alot
