Johnsonville Brats cooking suggestion says.

Slice one onion and simmer in a pot of ber.  Cook brats on low in the beer for 30 minutes and then cook crispy on the BB-Q grill.  Do not pierce the skin and the juices will keep in.

This method requires a nice hoppy beer or a sharp mexican brew.  You can throw in a dark stout for some extra body too.


Growing up I knew beer brats as bratwurst cooked on teh BB-Q with beer poured on them from time to time.  Good ole days.

This method requires any clear piss white trash brew, like the kind I stock my fridge with :smile:

Youve never had beerbrats? If you dont like brats, do it with hotdogs. I use budlight, or colt 45, and put bbq sauce on mine when on the grill

ive decided im gonna use guiness or a german beer b/c i want to be able to taste the beer in the brat

my recipe:

cook 12 brats on grill (not all the way so you can finish them up in the beer)
get a large pot and saute garlic and onions until brown
pour beer in pot
once the brats are done put them in the pot of beer/garlic/onions
cook for about 10 minutes and put on low heat and let people grab as they please

also forgot to mention pierce the skin before you put it in the beer so all the beer can get in the brat

You should be using a good pilsener like Pilsner Urquelle. Or better yet, a strong pale ale like Stone IPA, Dogfish Head or at least a Saranac.

Bratwurst Recipe


Bratwurst is made from pork and veal. You can substitute beef for the veal but unless you are making it by the ton, it is not worth the compromise. The recipe is based on a total of one pound of meat. You can work out the ratio for larger quantites.
60% (9.6 oz) Pork, 40% (6.4 oz) Veal...................1 lb

Salt ( pickling)..............................................................1 tsp
Onion Salt......................................................................1/2 tsp
Ground White Pepper................................................1/2 tsp
Marjoram.........................................................................1/2 tsp
Parsley.............................................................................1/2 tsp
Nutmeg.............................................................................1/4 tsp
Celery Seed.................................................................... 1/4 tsp
Ginger................................................................................1/8 tsp
Mace..................................................................................1/8 tsp
Cardamon.........................................................................1/8 tsp
Red Wine...........................................................................2 oz

Grind meat through 3/16" plate.

Mix non-meat ingredients in bowl and add to ground meat and mix thoroughly.

Chill in freezer for 30 min.

Mix again and grind through 1/4" plate.

Stuff into sheep or hog casings and air dry for 30 min or until dry to the touch.

Refrigerate or freeze for use.

I do it this way. I take some thick onions slices (half inch) and spray them with a little oil on both sides. I char the brats and char the onions a bit over direct heat. Simultaneously I have a foil pan with about an inch of beer and some garlic cloves heating indirectly. After the onions and beer is charred, put the brats in the bath, and the onions on top of the brats. You dont want the onions in the beer, just on top so they will be steamed. I then cover that with foil and let er go for a half hour over low / indirect heat.

Made some last night.

First I did the foil pouch with braughts and onion, S/P and BEER (miller lite).


Sliced potatoes, onion, garlic and wraped them in foil with a bit of butter and put everything on the grill.



After 30 minutes on low (250) I opened the braughts and put them on the grill up.  Poked holes all over the potatoes foil packs to let in some smoke too.


After braughts are done on the BBQ, open everything up and serve.
This is my plate.
