If they're close to being done, you could take off the protective foil layer (or whatever else you used) and just sit the jars upside down. It promotes air exchange and will help a stalled cake. I did it for a couple of my cakes when they stopped showing growth.

When you go to cutting on an uncolonised cake,you are pushing the sterility boundaries,and opening the door to contams!
If the jar has stalled try doing what I said in my first post,give them a week,and if they don't show any signs of growth,then you can operate,but only do that as a last resort,some jars just take longer than others and it could be a number of things,moisture content,substrate ratio,packed in jar too tight,contamed from the inside.etc.,etc.,etc.,
But if you do cut them,remove every piece of uncolonised substrate.Then do what ever,dunk and roll in verm,case,whatever.
