the top layer is to protect from air contems. when I used to grow from cakes they rarly colonized the top layer.

It doesn't hurt if it does. My understanding is that it acts as an additional barrier to contams when inoculating the jars. Verm. is very bland, and microbes are very unlikely to colonize dry verm.

The top layer is dry verm and it is there to protect the substrate from contams.The mycelium sometimes colonises this part but when you birth your cakes,you scrape this layer off anyway,so it doesn't matter whether it does or not.
