Haven’t tried anything else but I’m digging these. Just for storage I put the vac sealed chocolates in yet another vac sealer bag with multiple bars.

The chocolate texture is still getting dialed in but a little coconut oil and your IR thermometer make a huge difference. Tempering sounds hard but really isn’t. Like growing shrooomies. Gotta just try it and learn!

Vacuum sealable bags will have a textured plastic in the area of the open top that gets sealed.

Without the ribbed texture the sealer can not pull air out of the bag.

That's why vacuum bags are not good for multi use bags, when you fold them over and clip them to seal the plastic ribs still allow airflow by design.

You might be overheating your chocolate. Chocolate seizes if you burn it, and it goes from smooth molten chocolate to lumpy clay. Are you melting your chocolate in a double boiler or what's your process?

I melt the chocolate in a plastic bowl in the microwave using very short bursts - the theory is that by melting it super slowly it never actually gets out of temper and it works pretty well actually. I think my main problem is that I only use 7oz of chocolate chips but I put 14g of powder into it so each two squares is 1/8

Yeah that's why I started making the truffles. I add 100g of mush powder to two bags of chocolate chips and it always starts seizing. So I add maybe a quarter cup of heavy cream and then it's like playdough. Weigh the entire blob and divide by 50. Weigh out each truffle and roll em up!
