Well it would seem mushrooms are both, as they are more than just chitin!

But I'm regards to chitin being digestible, take what you think you know, read this article, then tell me what you think!

Interesting what says in the link, doesn't say that humans readily digest chitin but there's indications that the study group of westerners have lost much of the ability they at some point had to at least partially be able to digest chitin.

Is it safe to assume that most likely for all practical purposes a human should not be eating ingesting foods rich in chitin because the human gastric system isn't well adapted for this? This is at least how I interpreted what's being said in the study. Let's just say I know from experience what happened to my stomach when I downed a couple of ounces of raw mushrooms and it became very clear to me that my stomach didn't like that at all and I can eat everything never have a problem with digestion

I think the study is incomplete but indicates humans can digest chitin, maybe less so Americans. Goes back to "adaptability". Humans, like most biological things, adapt to their surroundings. Ide assume that because of our lack of interest, or mycophobia, in the west, our bodies decided it no longer needed to produce chitinase. Iirc the study also suggest that acidic substances of a pH of 2 can also digest it. Maybe I should reread it real quick. But I think it suggested even in the potential absence of chitinase the gastric juices, which are pH of 2 iirc, seem capable to degrade the chitin as well.
I think it could be very dependent on your ancestral leneage.

**
""
Since this chitinase activity was demonstrated at acidic pH, it is currently referred to acidic mammalian chitinase (AMCase). AMCase activity was present in gastric juices of twenty of 25 Italian patients in a range of activity from 0.21 to 36.27 nmol/ml/h and from 8,881 to 1,254,782 fluorescence emission (CPS), according to the used methods. In the remaining five of 25 gastric juices, AMCase activity was almost absent in both assay methods

So what is being referred to as AMC, is confusing. Because chitinase is an enzyme, and how that fits into AMC I would love to know. Is it the acid or the enzyme or both?????

The thing is, indigestion doesn't necessarily have a lot to do with what you feel in your stomach. I guess the fact that you swallowed large chunks whole could have played a bigger role, as well as your aversion in and of itself. Cooked mushrooms still contain chitin which has to be digested or pass through you in any case, so the only thing eating them raw would do (putting aside potential heat-destroyed toxins) is that nutrients would not be released (and potential toxins as well).

There's also a possibility that people have developed mild allergies to these things. Maybe even for similar reason that we see lactose intolerance or even celiac disease, and that might be a stretch me saying it like that. But I think, simply put, again our genetic lineage, as well as our "epigenic" influence on a daily basis.
Like if you live off of McDonald's and gas station food, your used to it, you don't really feel like shit probably, but if you've been eating organic whole foods for a long time, then try and live off the prior for a week, you just won't handle it like the person whose been eating shit every day for months

Maybe I need to investigate chitin more first because it's all a bit confusing at this point, like crab shell and lobster shell is chitin and we can all agree that our stomachs probably wouldn't like to get stuffed with a pound of crab shell, but then again I know I have eaten raw mushrooms (in very small tgoses tho) but still didn't have a noticeable effect so we can say that it's mostly a true statement that mushrooms should be cooked first but it's not a problem if we consume some chitin, we can handle that, just not as a regular food source perhaps and maybe this is what that doctor i quoted was trying to say but he sounded very dramatic even to me I must say. Probably is more like our gut can handle it raw but won't be able to utilize anything so it'd be considered indigestible in that sense as Adas pointed out earlier.

I thought cooking breaks down the chitin. Literally can't find any articles discussing that.
Did see cooking makes nutrients more readily available.

My stomach hates thick leafy greens (kale, collared greens, etc) and most definitely uncooked mushrooms.

Here's some more on extraction experiments I've done in the past. I'm posting cause it might provide some useful info for anyone interested in these kinds of endeavors, and I get to shit post a wall out of it so two birds with one stone, or as I like to call it 'express myself creatively' :bongload:

~175g chopped up fresh Mazatapec

Fruits were boiled for 10-15min in 1.5L and then strained of all the shroom material. Broth was then boiled again for ~1h to reduce to a thick soup

The soup was then filtered through a cloth to remove remaining particles

Volume of the final product was ~15ml

Liquid Christ Consciousness

I was experimenting with this because I wanted to ingest 100g fresh but I wasn't sure if I could stomach that (pun intended) because the week before I chewed down 60-70g normally like food and already the first 20g tasted worse than I expected. Everything after that tasted even worse and it felt like I could taste the taste in my ears and sides of the neck as well, at the end I had to resort to swallowing pins and small fruits whole with the help of water and bigger fruits I bit off into 2-3 pieces. I will probably never do this again and I don't recommend it. My stomach right away began making sounds I hadn't heard before, this was back in 2018 long before I learned that raw mushrooms are indigestible.

I made an arbitrary estimation that after some losses in potency 175g would end up equating roughly 100g. There would be losses trapped in the boiled fruits and some unknown losses in degradation due to prolonged heat exposure. I mixed the spiritual fluid in a glass of juice or tea and I don't remember how it tasted so it tasted probably aight. The trip was roughly as I had anticipated, felt like  around 30-40% of the total actives were lost during the extraction. It sounds like big losses if you don't have unlimited amounts of shrooms but the way I see it I managed to fit 100g fresh inside a 20ml syringe and that's just very practical and fun if you ask me, so mission accomplished :eatingout:

No it doesn't. If it did the mushrooms would literally lose their structural integrity. But no amount of cooking can do that. Chitin is tough.

Looks like it would’ve been a good flush, which means you got all the hard stuff down. Next time you just gotta hold off for another 2-3 days.

I would have, but the timing isn't the best.

I've been really enjoying this process - especially when it went to the FC.

I am traveling tomorrow, I won't be around for a week or so.

I didn't want to leave them and waste 5 weeks of effort.

I don't know that you would have wasted effort. You probably would have come home to big shrooms that dropped their spores, but are usable.

Pins are edible, but just a lot smaller than full shrooms.

But yes to what AKA said. You're doing it. You've got the basics. Congratulations!

Some people claim that gram for gram pins are stronger than the same shrooms fully grown. But I haven't tried it.

after last night's "dinner", I can attest to the pins pictured were the strongest 14 grams fresh I've ever had.

definitely not a wasted harvest.

new pins already forming on the cakes.

Good!

Before you leave town give your cakes a good misting and you should have shrooms when you get back. Probably well more than 14 grams fresh. You might have spores too, but that's OK. Just wipe it off.
