Just a straight forward how to sterilize bags in an All American pressure cooker.
The big star of the show are these little guys

Just 3 aluminum pipe couplings about 1 5/16" long with 4 slots cut into one end for water to pass under. Only use aluminum or stainless steel couplings.
Put these 3 spacers slits down and then put one of the racks that came with the cooker on it. Fill the water up to just 1/8" under the rack. (on this picture it was actually the "after cook" funky water but you get the idea.

Start your first layer of 3 bags. The bags have enough substrate so the top rolls around the side and rests directly in the middle of the bottom and it sits on the top. Real simple tight neat fold. Lay the bags like the picture. For the 3rd bag there is a technique of rolling/tucking it in position that is hard to describe but basically you lay it in at 45 degrees and twist it in to position between the other 2 bags. Put the filter on the inside of the group like shown. Doesn't matter if filters are exposed or covered but why not cover with the tuck.

Keep going to the next layer with a rotation so the bags overlap.

Last layer, rotating again.

All loaded up, keep the bags off the rim so it doesn't get bunched up on the lid.

Close the lid and heat the cooker until steam starts to come out of the valve and let steam escape for 20 minutes. Close valve and bring to 18 psi and maintain for 3 hours.
Turn off the heat and let cool naturally. Overnight (8-12 hours) and they should be slightly warm but not hot.
Release the vacuum on your cooker if equipped with the sterilizer valve and open the lid. Should look like this.

Wipe down your hood and put a short rack for the bag to sit on.

Then add your rack for the sealer

You can lift and move the bags by utilizing this flap on the fold shown here. Use this to get your hand under the bag to carry without disturbing the fold and carry to your flowhood.

Now carry the bags one or two at a time to the hood and sit them like this. Careful, they want to fall easily. Stack carefully and allow to fully cool.

Wipe down your sealer and place it like so and you are ready to get to work!

Move one bag at a time to your short rack and open the top for inoculation.

Then simply use careful hand positioning to pinch the top closed and move the top towards the sealer while pinched. Hold down the top with one finger outside of the seal area and with the other hand close the sealer on top of the bag.

Don't let sealer swing up unassisted or makes a big swoosh of turbulence! Just keep hand on top.
One bag at a time from the stack until you are done. Easy right?

How many liters does the all american have, and what is the size of your bags? I have the presto 23qt and currently looking into what size of mycobags to buy so I can fit most of them in.

This is a 41qt AA and using 3T bags.
I think 4 bags would fit of this size in a 23qt.

I've been sealing the bags before pressure cooking, is this wrong? I also usually leave the the bags to cool inside the pressure cooker after the time is up, is that also a bad idea?

How many quarts of grain are you putting in each bag?

I'm putting about 3.5 actual quarts.
Unicorn sells the 5 micron bag as presealable but I have heard rumors the others may work fine. I know that they would for a fact if you cooled them under air compressor pressure that matched the cook, but that's kinda wacky stuff.
And yes I let the cooker cool overnight usually but sometimes I let it sit for a long time if I'm lazy. I find the ideal time to work with the bags is when they are still slightly just a little warm from the cook. The moisture evens out better it seems. Even 95f seems to work fine for inoculations.

Not wrong, just a different way to process spawn. I've been using presealed Unicorn 3T bags for 2 years now without any significant problems. Since they are sealed, I can pull them out as soon as the PC hits 0psi if I need to get another batch running without risking sucking dirty air into the bags. They do 'brick up' alot better if you let them cool in the PC overnight though

That hood though...
I'm glad to see somebody that doesn't put tyvek sleeves in their bags. Always thought that was kinda weird.
Sandman, what are your thoughts about contaminants getting sucked in to the PC when releasing the vacuum? The bags are essentially vacuum-sealed after PC'ing and have filters, is it really necessary to release the vacuum of the PC in front of a flow hood? I can't say I've personally had issues releasing the vacuum in regular open air, but maybe I just got lucky once or twice.
That 940 is a big boy. Nine bags, holy shit! What do you use for a heat source?

I release the vacuum in regular air since a 941 full of bags is too heavy to move to the hood.
My heat source is a 2600 watt electric burner.

I release pressure on my 75xs in regular air next to my flow cab then i unload the bags into the flow cab for knocking up. Works just fine for me

Fantastic info. How do you get up to pressure properly?
