DIY Ginger Tea Soda Tonic * 1

I been toying around with some natural carbonation methods using same method to making homemade hard cider and it is nothing but pure amazing! I'll break down how to make it. I've been drinking out this 5 gallon jug for a few weeks and notice it's pretty damn hydrating, cleansing (natural diuretic), and lots of good microbes! I also noticed distinctly less fullness! It's night/day with the benefits + fun hobby.

  • Fresh Ginger Root
  • Varieties of Brewing Champagne Yeast (Red Star)
  • Fresh lemongrass
  • Raw Honey
  • Raw cane sugar
  • Ginger + Probiotics – Celestial Seasonings (local grocery store tea aisle)
  • Jammin' Lemon Ginger - Celestial Seasonings (local grocery store tea aisle)
  • lemon juice
  • 5 gallon water jug + airlock valve setup *rig one up yourself** example -



You will need a small pot to get the initial brewing done. Add about 1 gallon of water to a pot and add 3 tea bags of each celestial seasonings for a total of 6. This can be adjusted next time depending on how deep you want the flavor of the tea. Squirt about 2oz of lemon juice into water. Add the lemongrass and fresh ginger to the water as well. I boil this for a long time about 25-30min to get all of the flavors out.

You will need to wait a little bit before adding to the 5 gallon jug. When it is luke warm add it to the 5 gallon jug. Then add 1 packet of champagne brewing yeast. Allow the yeast to dissolve for about 20 minutes. Now I do not add much honey or sugar because the yeast will take this and convert it to alcohol+co2.

The purpose of this is to make a tonic not a hard tonic. I guess it is similar to kombucha. I add about 1 cup of raw can sugar and just eyeball the honey. You don't need much sugar to get solid carbonation and a little alcohol. For comparable measure when making hard ciders they recommend an entire 1-2 pounds of sugar per 5 gallons. Now fill the rest of the remaining jug up more spring water and let it sit for minimum 48 hours before tapping.

I tend to start tasting/tapping it after 48 hours and it slowly begins to change I will then add sugar if I want a little more tart/alcohol/carbonation. You can basically add any herbs you would like and make this your own. The end result is a pro-biotic carbonated tea that is beyond amazing taste and health wise!
