Made some killer root vegetable soup the other night.

In a huge pot

I used bout a quarter cup leftover bacon grease (you could use sub olive oil)
fried up onion, a whole head of garlic, jalapenos, and celery till soft.

Boiled a few electric kettles worth of water, added those and some "better than bullion" (you can use veggie stock if you prefer), then I hella rinsed and diced up:
4 medium beets and the attached greens, skin on for max nutes
2 parsnips (skin on)
4 carrots ".      "
A rutabaga
A zucchini
A yellow squash
Red pepper
White button mushrooms

Then can black beans,
Can chickpeas
Can chili beans
Cup lentils
Frozen bag corn,
Whatever misc leftover frozen veggies from freezer

Simmer 45 min/1 hr
Once the lentils were soft,I added the acidic ingredients
Can tomato paste
Juice of one large lemon
Much black pepper
More garlic.
A few hearty squeezes of Kalles Creamed Smoked Roe (Google it, great on toast) but you could use fish sauce or Worcestershire

Few shakes MSG for good measure, but you could just use extra mushrooms and tomato paste if you are anti-msg

A can or two vegetarian refried beans to dicken up the soup, remove from heat and add a bunch of cilantro. More pepper/salt to taste.

The soup is a vibrant purple from the beets, the cilantro and beet greens contrast beautifully. I'll probably add a dash of unsweetened cocoa next time,and maybe some cumin when frying the initial veg.

I like to add a wad of cream cheese to each bowl but any cheese should work (or skip it)

And some crackers or crushed up chips or just a piece of toast








Fiber content is thru the roof

Looks delicious.
Made and froze a bunch of chili recently.
Planning to make a hearty chicken noodle soon.
