Personally I’d do another transfer. You’ve got growth right to the edge of the plate and not sure what’s going on at 6 o’clock…although it’s hard to see, if it’s clean then sure go to grain but if it were me I’d do another transfer, why waste your grain

Plates in the fridge will build up water, reckon if I bought a mini fridge and turned the temperature down it’d keep them good for a while without the water?

No doubt it’s convenient to place it in there and have it ready, but 10 seconds in the open flame of an alcohol lamp does the same. Certainly something to have at a commercial scale though.

They build water from temp swings. Cheap little fridges are bad at this, especially if they have a freezer in them.
You could buy a lab fridge for cheap on ebay if you look around or build one super easily out of a chest freezer. Simply plug the chest freezer in to a PID temp controller with a temp probe in the freezer and set it to your desired temp, 6c/42f apparently is a good temp. Program the PID to keep a 1 degree difference in between kicking on and make sure to have a minimum of 3 minutes between cycles or you can burn the compressor up. Just have the normal switch of the freezer set to max so it will always run full blast when the PID tells it to.
Make sure that you autotune the PID and you run it for several days to make sure it is good and stable before you put valuable cultures in there.
Add thermal stores to your setup, keep them in soft coolers inside can help too.

I have been beating my head against the wall for months dealing with an insane rate of contamination. Nothing I have tried has worked. I was starting to lose all confidence in my ability to grow mushrooms.
I pc'd 18 bags of oats a week and a half ago. I never had the chance to inoculate them as I have been super busy baking and cooking for my sisters wedding. I went and checked on my bags of oats a few minutes ago. The oats were sterilized in my 75x at 20 psi for 3 hours. After they cooled I took them to my lab and placed them on a shelf where they have sat ever since. I just discovered 4 of them with visible contamination. These bags were sterilized pre sealed. They are still sealed. How can this happen? Should I expect the rest to eventually contaminate also?

Vent for 20 min? How big are they? Spaced? May need to go longer.. I never had any luck with 3 hours, i do 3.5 at least. Been doing 5 last couple runs, may be overkill

I vent for 20 minutes or longer everytime. But that doesn't explain mold contamination with uninoculated sterilized grain bags. Bacteria endospores could survive if the sterile process isn't complete but mold is not surviving those temps.
Anyway, I submerged one of the bags and I got no bubbles. I decided to squeeze the bag while it was submerged and air bubbles began to protrude from a few spots on the bag. I lifted the bag and searched those areas but cannot visibly see or feel any holes. This is fucking weird but could explain my contamination issues at large. I think I might make the switch to jars.

You're exactly right, mold will not survive the cycle which means your contamination is occurring post cycle. This rarely happens to me but it's always when I disturb the mouth of the bag enough to break the seal.
Are you using unicorn bags or a knock-off?

That is a good point... I'm sure your guage not broken and you know how to read a rocker if it is. Do you know if all 4 were in the same cooker or?
Another thing I was going to say, and I know it might sound crazy, but your oats look dry ha idk. Qnd if that were the case it could be a improper sterilization. But you checked the hydration also?
They're presealed uninoculated

I get my bags from a shroomery sponsor. I have used them in the semi distant and relatively recent past without issue. It has only been within the last 4 months that my contamination rate has skyrocketed. I typically inoculate within 2 days after sterilizing. These particular bags have been left undisturbed for a week and a half.

I mean you guys are saying it yourself but yet we are looking directly at it. How can mold survive those temps? It must be improperly hydrated.

Even with a broken guage or improperly hydrated grains mold dies readily at atmospheric temps. If your bags are sealed I'd suspect shitty quality bags, or even a bad seal around the filter.
I have sterilized grain and substrate bags that sit for up to a month with no issue but I always make sure to source unicorn bags.
