more info awaits.

Pins get to be about an inch high and then the caps open.

The stems look fine, its just the caps that look aweful.

but the mycilium is thriving right below the surface.

when I cased the substrate/mycillium was a little dry.

i'm gonna give it a day with the humidifier and see if extra water solves the problem.

otherwise, do you think its safe to pick them???
I don;t want to wait till they start lookin horrible.

If the caps look horrible, which they definitely shouldn't, the only real answer to this is contamination. Pick one of the mushrooms and cut it's stem open and see what it looks like (i.e., black and ugly or not). If it's black and ugly, I'm guessing it's verticullum or cobweb mold. If it's not, then I'm guessing it's bacterial blotch or some other bacterial contamination, but some bacteria can have similar effects too. It's nearly impossible to tell without a detailed picture of the mushrooms themselves.

The shortness of stems is either due to this contaminant, whatever it may be, or an extreme build-up of CO2. Im guesing it's the former.
