cracked grains vs whole grains...
    #27465704 - 09/12/21 02:37 PM (3 years, 4 months ago)

So when i went to my local store, I found tons of options.....wheat, barley, milo, oats, millet, and corn.  But they also had cracked corn.  Since the mycelium is feeding off the internal starch of the grains, would a cracked grain allow for easier mycelium growth?  Would it be better to go with a cracked grain?  Or would it get mushy during the hydration process?

Thanks again.

The shell of the grain helps to maintain moisture of the grain whilst keeping its shape. Cracked grain would end up a mushy mess. Whilst it may be possible to hydrate cracked grain without turning it to mush, if there are options at your supplier for whole grains. Choose the whole grains.

Any reason in particular you are looking at using processed grains?

my hypothesis was that cracked grain when used with either agar/liquid culture, would colonize much faster because of the availability of the starch.

I tried experimenting with things during my noob era and found that plenty have come before me and already done the experiments. I t didn't take long before I started to just follow tried and tested teks. I've thrown too much time down the drain to even contemplate  experiments again but don't let that discourage you. Give it a shot with a side by side

Cracked grain is about the worst stuff for spawn. You'd think the availability of starches would make things faster but all it does is make things messy, gross, way more prone to contamination. The seed lining makes for a enclosed grain that the mycelium has no problem penetrating and acts as a protective barrier against bacteria and such. The loose sugars are food for bacteria and all sorts of shit.

I haven't followed a "tek" to the t in a long time but learned while there were very few. I'm not about to preach the "tried and true" ethic but it does have it's place especially in the beginning. If all you want is some shrooms follow a "tek". If you want to learn then experimentation is gold but you need a foundation of success to base your comparisons on. If people have made something work consistently then it is a good starting point to get consistent results. If it doesn't work for you then at least you know it was something you did wrong and have a good amount of info on maybe where.

Following recipes is a good way to learn to cook.

Keep thinking outside the box. Cracked grain is crap though.

Your hypothesis does have merit and while you’re correct that the extra starches are going to speed up colonization, if every kernel of grain has mostly exposed starch, you can end up with too much starch.. that can make shaking the jar a nightmare.

You can play with exposed starch while using normal grains like wheat or rye.  Just simmer the grains longer.. eventually, some of the kernels start to burst (for me, it’s usually around 40 minutes with rye), which exposes the starchy insides.  When you start with intact kernels, you can manipulate how many burst kernels you end up with by going longer or shorter on simmer times.  When you start with cracked grains, you have no say in the matter… especially corn.. it’s already going to be extra starchy compared to other grains.

Fair warning though… you better have clean inoculate because everything loves starch.. one of the reasons I like using extra hydrated grain is because I’m going to find out real quick whether or not my cultures are clean
