Drying fruit cracker dry?

I use a dehydrator to dry the fruit until cracker dry and then I store them in a mason jar with a desiccant. I find at times that a day later I open the jar and they are soft again. Is this normal or am I not doing something right?

are your desiccants dry? i had cracker dry ones then put an old desiccant in, and they went spongy the next day.
if you have a 5g desiccant, it should weight like 5.2g.

That’s exactly what I do and all my mushrooms remain cracker dry. Sounds like you’ve got a leaky jar seal, or a depleted desiccant pack, or both.
If I were you I’d first check the rim of the jar for chips or cracks that are letting air seep in, then try a brand new lid and brand new desiccant pack. I might even run the mushrooms through the dehydrator again to get back to cracker dry before the rest of the repackaging.
Should be easy to fix this problem. Good luck!

you can dehydrate your desiccant packs in the dehydrator also. mine went from 12.4g to 10.5g or so. thats how i knew it was the desiccants.

If you don't dry sufficiently in the first place this will happen. The outside dries but inner moisture will then wick back out to the rest of the fruit. 24 hours at 160+ if you aren't already.

assuming the fruits are indeed cracker dry all the way
I'm keeping cracker dry shrooms in the fridge inside good quality ziplock bags and they have stayed cracker dry for about one year. The problem is that the fridge is over 30% full with just cubensis lmao.

Mine are 10g desiccants (these). I just weighted them and they are about 12.65. Company says to refresh them when they are 13-14g. I think I will try using the dehydrator for this as someone here pointed out!

I doubt it is due to leaky jar as these are glass mason jars and a number of different ones with same result.

Thanks for the tip. It says oven only but I think they are just trying to rule out using a microwave for this. I will certainly be trying out the dehydrator for this.

OMG! I was doing 5-6 hours at 160. They would feel hard and dry and I was even afraid that I was overdoing it hurting potency. I guess I need to go much longer.

I can't speak for the Epsom salts but if your looking at diy desiccant bags. I use kitty litter folded up into a cushion cover and put it in a Tupperware container. Works very well to keep moisture at bay.

If I put it in jar/bag before it cooled down totally could that cause it to go soft in a day?

Naa, not if it's already dry. But yours probably weren't since you only did 6hrs. Your desiccant being over 10g proves this. I got the same ones and they weight like 10.3 when dry.

I tried it with my very first batch as an alternative to a dehydrator and it didn't work at all. Maybe it would work if you completely bury the mushrooms in the crystals.
I'm confident it would work as a reusable alternative to silica gel. The chemistry checks out. Whether it would be better than silica gel, though, that's difficult to say.

If there was a #2 item in the hobby for things to Buy and a PC was #1, IMO a dehydrator that is enough for your needs should be #2. The small expense of buying it before you need it is just extra incentive for getting to the point where you do need it.
