What is the secret of jalapeños??

Hi, im turning to this forum in an hour of dire need. I grew a lot of jalapeños this year. My intention was to pickle them in vinegar, since i love pickled jalapeños. I made 10 jars so far with a generic jalapeño recipe i found on the internet. 4parts water 1 part vinegar, sugar, salt, onion, carrot, a bit of garlic and the spices.
...and, they do taste good. Like a generic pickled chilli peppers. However, they do not taste like THE jalapeños. There is something special about store-bought pickled jalapeños that mine lack.
Does anyone know what is the secret of the jalapeño taste? Would you share your recipe? Thank you, i really need to know, since i will be processing the majority of my crop in the days to come.

The secret may be in the spices and their amounts. I wish I could help but the only thing I can say is that I like them when they include bay leaf and marjoram (don't substitute for oregano).

I don't have any amazing recipes for pickling japs or know the secret of how to make them consistent tasting like the store bought ones but I can say that they are one of the most variable pepper in terms of spice and flavor in my experience. Many times I've gotten two peppers, from the same source, at the same time, and one is hotter then the devil's vagina and the other tastes like a bell pepper 
Maybe that's the issues maybe monocrop cloning is a better way of making a more consistent flavored pepper. I'm not sure just my two cents. Check the ingredients in the store bought ones and try and replicate it or something, maybe they have something you missed in them. Like the monosodium glutamate,that shit gives most things an especially good umph. It could be a pickling time thing too, I know for a fact different types of pickling methods take different amounts of time to properly pickle and or ferment. I'm an idiot though and this is all food for thought. Good luck man, hope this helps.

I think the store bought jalapenos don't have sugar. Just peppers, water, vinegar, salt, and in my case I added calcium chloride for crispness.
I use a VERY simple recipe: Mine came very close to store bought.
Pickled jalapenos Ingredients from the video About 1.5 lb of jalapeno peppers 3.5 cups white vinegar (5% acidity) 1 cup water 1 tablespoon Kosher salt calcium chloride (1/4 teaspoon per pint jar)
Mine 8/22/2021 Made 2 pints 14 oz uncored 2.5 cups vinegar 2/3 cup water 2 tsp Kosher salt 1/2 tsp calcium chloride Jar them up, Cover tops with foil. Bring water half way up the sides in an instant pot. Set instant pot to 0 minutes on low pressure. As soon as pressure hits, unplug it and release the pressure.
