From what I understand the Helvellas can be eaten, although not of choice flavor. The Gyromitrans are the ones of choice flavor, but may contain the gyromitran toxins. Always be careful folks, for the toxic tasty ones! -Levi7.

I believe there 's a group of closely related chemicals called "hydrazines" in these mushrooms. One of these--monomethyl hydrazine--is produced synthetically for use as a rocket fuel and solvent. Related compounds (in the fungi) include gyromitrin and helvellic acid. All of these compounds are quite toxic to the liver in larger doses, and potentially carcinogenic even in small amounts. They occur in trace quantities in many of the Ascomycetes, including the Verpas and the true Morels. Fortunately they are highly volatile and water-soluble, which means they can be removed by drying or parboiling the mushrooms. Even true Morels should be well cooked, to evaporate off the traces of hydrazines present. Verpas and Helvellas can be treated the same way and eaten with no ill effect. The Gyromitras or "lorchels" should be well boiled and the water thrown away, or else thoroughtly dried in a dehydrator, to remove the toxins. Do NOT breathe the vapors while thus preparing them. There have been a couple of cases in Europe where an entire family had a delicious meal, and nobody got sick but the cook who died from breathing the cooking fumes.

Here is a photo of Helvella lacunosa (not-edible), I found last week in pine woodland, while visiting California. One specimen puffed a cloud of spores when I disturbed it. Looking forward to finding some True Morels!
