Why does one need to wait for casing until fully colonised?

Why do people wait for those last "pea sized" clumps of grain to be colonized before fully casing? Is it so mold has less of a chance or something? Also, what if someones jars that are basically colonized start looking "wet" around the edge?  Thank you!  :cool:

Yes, its done so that contams can't get a foot hold, in the more
open enviroment of the fruiting chamber.
Its much harder for contam spores to germinate
on other species mycelium, than it is on uncolonised casing
substrate.

The jar moisture thing is either no enought air exchange so
the water the mycelium sweats builds up, or a bacteria, hard
to say without seeing it, but I would guess the first as its more common.

Yo Loki , I just noticed sweat building up in my jars where the mycelium is and I have tape over the holes , should I take the tape off or just leave it ? And if I do take it off will it be more prone to contamination ?

I would take the tape off and flip the jars. Your goal is to get the jars colonized as fast as you can so contamination won't be able to get a foothold.
