Fan more often, maybe give them a quick temp drop, and give them light to initiate pinning.

Azure I agree, my friend had a whole tray one time that started pinning but stopped growing. Frustrated she placed the lid on the container(filled with damp perlite) night and day,( didnt bother it at all)and left it alone . After three days she went to the closet and to her surprise, she had a dozen medium sized fruits and about four aborts.

Its two in the morning......Do you know where your paperbag and flashlight are?

I agree with psilocybe cubensis, the mycelium is only visible on a few spots. More colonisation before initiating the pinning
