Yummmm I need to start growing Lions Mane.
My first two maitake fruits are finally ready to pick! What a harvest from two blocks.. 12 more on the way luckily maitake freezes quite well for storage.

April 20th 2021, Keep in mind this first round of bags is/was full qt of spawn. The 1/4 qt bags are about 3 weeks behind in progress, but still have nice fruiting bodies forming.
Not gonna do a second flush, I want to clear my shelves for an oyster run. But I am going to cut up some 8lb oak logs and bury the used blocks under them out in the woods. They say you get a flush a year for every LB of wood. After they colonize obv, which could take a year or two.

Thanks. I think this chestnuts pinned on the side of the bag and I ran with it, just left the rest of the bag to conserve water.

Outdoors LM yesterday and then harvested before daylight and spent the morning making crab cakes. Fucking amazing!!! I didn't even have any the ingredients just seasoned by taste. Haven't enjoyed lions mane til I tried crab cakes!

Also have some KO pins forming outside, hopefully ready in a day or 2 for some pasta.
No cubes or funguys?!? Somehow LM and KO is pinning/fruiting and it's been in the 80's-90s during day and 60's at night...Mush always does what it wants!

Couple days ago I sauteed a big handful of lions mane and added it to my tuna salad recipe. Not bad at all. Ever since my lady made mystery mushroom casserole with lions mane I've had a hard time enjoying it.

I've dried sautéed them in the past. Then added either oil or butter.
This time I peeled like crab meat, added just enough water to cover, salted the water, brought to a boil, and simmered for 5ish minutes.
Let it cool, squeezed excess water out, and now the texture was edible!

King oysters make great pulled pork. Ppl just always make the mistake of adding the bbq sauce and marinades too soon with mushrooms. You gotta cook the shrooms first and get them nice and tender then add your flavors. Lions mane and Bears head tooth are both great lightly cooked and then dipped in a garlic butter sauce. Good finger food just like crab meat.

Oysters def. need to be softened/caramelized (gills) before adding some acid, fat, or alcohol etc.
Been meaning to do pulled pork oysters, I'll try it with my current batch. I never know if I should be misting with my hose at this point. Got nice pins formed. Weird, forming between shiitake and oyster bed. Please don't take over the shiitake area.

The only thing is, with outdoor Kings youre gonna get big caps. Theyre gonna be delish but its the stipes that are good for shredding into pulled meat.
