It’s probably not enough evaporation.
Pans are tricky though even using a set up that’s worked great before I’ll get a tray that goes bad.
Building a pan fruiting chamber is the best way to go. Monos are very hit or miss, and mostly miss.
Also casing them properly and at the right time is huge.

lol you posted the link that got me here in the official pan thread.
Page one will have everything. Jcms chamber is probably the cheapest and easiest one to build.
For casing it’s usually best to wait until the whole surface is colonized, then give it two days and then add casing. If you do it right at full colonization they’ll just eat the casing.

I've only grown 2 trays, but I wouldn't say it's fucked.

I grew mine like that. What I did at this point is what Aka mentioned on casing, let the tops finish, then add a VERY thin layer on top. I let it sit like that for a day or two and then sprayed the casing heavily. I upped the room temperature and put them under a fan to increase evaporation. Once it just started to dry a bit, I put them back in the tote. I had pins the next day. I did enough fanning that they were practically grown in the open air.
That's what I did. Will it work again? I don't know and can't guarantee it will. If you can put together a tried and proven setup, that will be your best option. If not, it might be worth a shot doing what I did. But it's a pita and I don't recommend. It was a hell of a lot of work.

I had 4 trays/tubs never pin
I had a fogger and a fan, but didn't follow a Tek and just winging it
and they all molded after 4 weeks, accepted no casing, no fruiting
They seem unforgiving
Too bad since they are so potent and contain serotonin?

I think RR said pans can take up to 2 weeks to initiate pinning and he likes adding wax paper on top of the casing to keep the humidity level higher.
like my man AKA said look for the JCM chamber.
