So kinda wondering about other's experiences with different Pc's.  I've read a couple teks on bulk subs where they talk about PCing for 3 to 4 hours (have no idea what tek anymore it's been awhile). So I'm wondering if when I get to that stage where I'm processing other subs for different varieties other than cubes, if my experience with my PC is due to its inferiority and whether others are able to run for that kind of a stretch. At this point I'm sterilizing WBS in quart jars and I'll load up 9 in the PC with 4 liters of water and a couple times it's run dry just prior to hitting 90 minutes. I hesitate to put more water in there because that already takes it up ¾ the way up the jar and I worry anymore will lead to infiltration when it gets going. So I know that when I go to do bulk bags I'd probably only be able to fit one or two up on my raised rack in order to run more water...possibly, not even sure I'd get 3 to 4 hours running without going dry. Even if I could it seems super inefficient doing 1 or 2 at a time. So I'm wondering if others are able to run these for those extended times using less water than I'd have to in mine due to having a different, more superior brand than what I have. I bought mine a few years back for gardening processing so it works absolutely great for those shorter canning times but not so much for mush production. I have a T-Fal 22 quart canner with 3 setting adjustable pressure dial. Any info is appreciated.

I would seriously recommend that you buy a presto 23qt, or even an All American if you have the dough.

The right tool for the right job, you'll always find yourself having to fuck around with cramming a square peg into a round hole until you do.

I was definitely thinking of going the Presto route. Have you used either one of those for extended processing times?

I have the 23qt presto. I do 3-4 hour runs in it just fine. It's high and I space the trivet up quite a ways so I can add a lot of water and it never even touches the jar (less water and more steam contact is better). I can fit 7 jars right side up. But if you want to run 10 jars by adding 3 on top sideways, you wouldn't be able to use spacers and that also limits you on how much water you can use.

BOD has a tek here where he runs 3qts of water and it goes half way up the jars, but that's because he's not running a big spacer.

3-4 hours might be pushing it for 3 liters of water but I think it should be ok. His tek does suggest taping a quarter to your pressure weight which I have done and it really does help cut down on the amount of moisture lost to venting during cooking. You can turn the heat down and don't have to have the weight "dancing" the whole cook.
