I've heard its good to wait about ten days before inducing pinning, to let the Mycelium get really established, is that a good idea?

In some cases, yes, you can do that. In home cases such as ours, I don't suggest it. The longer you wait, the more you run the risk of contamination. In a controlled environment this could be beneficial, but on a general basis, by the time the mycelium reaches the surface of the casing, it's ready to go.
