Nice, that's quite a few pins!
Careful about misting them too much. I don't know about this species, but the beech I grew did a lot better when I left it drier. Misting may make them abort. Or it may not, I dunno Just something to worry about lol

Haha, thanks for the suggestion - seems the more you learn the more there is to worry about!
I'm fanning 2 or 3 times per day, and I'm trying to mist only when I stop seeing condensation on the lid when I open it up.
I'm really curious to see how well this strain/species fruits!

Interesting how hydrophilic the caps seem to be - I believe this is just condensation. I've removed the lid and replaced it with another inverted shoebox, to give the fruits room to grow up. Some of the caps seem to be turning inward a bit - any idea what's going on there?

Looks like what oysters do when they want more fresh air.

Thank you. Hopefully the new lid setup offers enough additional airflow for them to recover... live and learn!

They look more like pleurotus than other hypsizygus like beech. Weird species.

Well, these mushrooms seem to be ailing a little bit now:

I'm not sure if this is the result of too much or too little moisture, or too much or too little fresh air, or what. Would be happy to hear your thoughts and recommendations. I'm still fanning twice a day and misting only when I no longer see condensation on the lid/walls of the tub.
But I did get a couple of nice photos the other day:

Looks like they need more fresh air. They look just like oysters. Can you tell if the gills are deurrent?

Looks like a combination of too little moisture and far, far, far too little air. And yeah I agree those pretty much look like regular oysters.

Guess I'll try for yet more air and more moisure... gonna get creative with an ultrasonic humidifier and a PC fan. Thanks for the feedback. The gills on these guys appear to extend down the stipe, yeah... but it's hard to tell given the deformation and mild shriveling. Lol. It's odd, that's not what I thought I observed on the parent colony.

Very curious. I wonder if they can show both gill attachments.

Hay, I've been growing them for many years. I think what you're getting for information is not entirely wrong. Tesstulatus and ulmarius have been mixed up for several hundred years . Both have re-classified many times. I've been dealing with Paul over at Fungi P for some 35 years and I will tell you , He has it right. You really need to know your shrooms to tell the difference. Side by side is the only way really. At one time they were both classified Pleurotus. Hypzygus was created for clarity. If you go to Pauls book , Growing gourmet and medicinal mushrooms, and look at the growth parameters for the "beech" mushroom , he has the taxonomy history spelled out quite clearly. By the way, If you get them figured out , they are an out standing mushroom. I grow about 150,000 pounds of shrooms a year and they are very popular

Well, I gave up on these little guys today. A second flush appeared but started going the same way - wet, brown and withered. And I could spot the beginnings of some mold growing on the surface of the cake. I'll try again some day. Or maybe they'll do something interesting out in the compost bin. Thanks for the help and advice everybody.
When I crumbled up the grain/coir brick to put in the compost, I found it to be dry dry dry on the inside - no free moisture whatsoever. So perhaps I should have soaked the entire cake in water at some point along the way? Maybe that's part of why the fruits seemed so thirsty, even though I was misting plenty and there was always a little condensation on the surface.
I'm not sure what else I should try differently next time - maybe a fruiting chamber with more consistent humidity, like a SGFC or a tent with humidifier. I also have some mycobags to try out now.

Yeah, try them open air however you can. A SGFC will not be near enough air.

Thanks Forrester. It seems like people have success with SGFCs and monotubs when growing Psilocybe species; do these species have uniquely low fresh air requirements compared to most gourmet species? Or are those cultivators just more attentive/skilled than I am?

Yes, most edibles require a lot more air than cubes.
