Nice build, how does it seal? A simple rubber ring on top of the rim?

This thing needs a serious cool down time.
Bags don't like to be stacked up on each other during PC. It's best if you can have each bag with no other bag stacked on it, each layer it's own self supported shelf. The bags get thin when they deform and then pop and tear easier. Just a sperate thing from not waiting quite long enough for cool down. I run a 35 gal sterilizer that I made. I can open it as soon as I want after pc without popping bags but I usually wait 4-12 hours. When I take the lid of is when the bags sort of suck down and vacuum themselves down. Just unsealed bags with the simple fold over tuck.
I would consider those bags that need to suck down after you open the lid โpoppedโ bags.
When I open my sterilizers the stacked bags are completely devoid of air from being exposed to 20PSI compression on the chamber for 3.5 hours.
Until theyโre COMPLETELY cooled down, I do not open the sterilizers any more and there has been no resulting issue.
The thermal battery from stuffing 100Lbs of tightly packed grain bags in to the autoclave requires a long cool down time.
Giving 24 hour cool down time solved all problems

I had waited 5 hours. Not long enough. Going to give it a 24 hour cool down
If if was still venting that much steam after that long you could have just shut the valve again, no?
When I pressure can soups if I open the PC as soon as the pressure is zero (safety lock drops) the jars will boil over and run the risk of the seals being spoiled. I've waited 7 hours to take the lid off and the jars still start to boil gently, though not enough to boil up to the seal.

There was no steam vented from the unit when I ruined a batch
Just a hiss from the pressure differential
The bags popping was from the same thing that makes the soups boil over. Internal core temp differential to the new atmosphere

Pressure releases as the insides cool. If the bags are mostly still over 212*F then the water around them will still be boiling at atmosphere pressure, so the pot won't be able to depressure completely.
My little NutriBullet liquid innoculent! Just did 80 quarts, took just under an hour to noc and shake. These jars will be ready in about 7 days. Love it!

If it works decent I'll post what bags I used. Just spawned today same ratios as a 66qt mono. Don't mind all the tape I know it looks like shit. The 2 left bags I had to dick around with to give the bags as much volume as possible.
How'd these turn out?

we've come full circle! I believe the old tek was called sandbags? I'm probably wrong. but before people figured out monos, they were doing bulk bags like that.

Modified my dehydrator to hold more. I adapted the idea from what funky was doing with his. This can be used without any or all 4 trays that come with the presto dehydrator. I've got some ideas on how to make actual screens for the bucket instead of just folding the screen over the mushrooms but this will work for now.
