Kast is right steam has a much bigger heat transfer coefficient
than water. When not completely under water only the part thats under water will heat up enough for sterilizing (when using no lid).
When using a lid, the steam will heat up every part of the jar!

i have used the boiling method and so far... 0% contamins.. and i somehow fucked up.. didnt let em cool enuff (2 hours right after boiling next to a fan) opened the lid like every 10 mins, and water droplets got inside the jar, and still no contamins... i guess its just luck..

Boiling works to a certain degree but a pressure cooker is way better. One thing about boiling, if the water bubbles over the lid, some can seep in. This is where you'll get your overly wet substrate and the contams you mentioned.
You can prolly find a used pressure cooker at your local thrift shops for under $3. I see them all the time. They are also great for resterlilizing used syringes and jars that had contaminants and you can even cook in them!

Umm, don't place your sterilized jars in front of a fan. Not unless you want to hurl a plethora of contaminant spores a hundred miles an hour toward your "sterile" substrate. That is, unless it's in front of a flowhood.

Kast is right...you can also crack your jars by cooling them too fast.
Sounds like too much moisture plain and simple. Whatever Tek you're using you're either putting in too much water to start, or water is getting in during the boil. Try covering your lids with foil to keep any extra from getting in. Steaming will also never get your jars beyong 212 deg F, the pressure in a PC lets the water reach 250 deg F before boiling [at 15 psi]. Many critters just won't die at 212, and some will live beyond 250, medical autoclaves reach 30psi which equals 275 deg. See attached pic for a nice temp vs. pressure scale.
