There are a bunch of decently rewarding games that are similar if you haven't played the Nioh games yet I had a lot of fun with them even though the combat is somewhat different but still the same basic idea.
If you like playing 2d older style games Blasphemous is awesome and also Noita if you like spell casting. Demon souls is the only souls/bloodborne/skeiro game I never got to play when ps5 has been out for a while I'll probably try to get one. The remaster is amazing that's what they should of done with the dark souls 1 remaster it was barely worked on

I never beat sekiro.. I finally finally beat lady butterfly, but couldn't get past the flamming bull. I got real busy at work and stepped away. It's such a large gap I'd have to start all over.

Souls connoisseur here. Can't wait to give Demon Souls a go on the PS5, That is when I can pick the system up. Sekiro was a beautiful game.. As far as skill goes, Lady Butterfly is the harder fight when compared to bull. Take some time to learn the mechanics of Sekiro fully and it will all be a breeze. It's actually very rewarding to learn the combat mechanics, it's nearly the opposite of the Souls Games. Stand in their strikezone and parry the hell out of your opponents... Even the bull. It may seem unnatural after playing Souls but yes you can stand your ground and parry the bull when it rushes you.
Until Elden Ring...

Well if you mastered all those moves to do it. Wow, it is enough. Brother tried to get me into it and, I was like, fuck this. Congrats man.

I'm not sure how worth it another playthrough of Demon's Souls is. I was stomping bosses late-game on NG but after I beat NG I could barely handle the damn spider boss on NG+ at the first Archstone. Also, you have to get through the first level Boletaria or whatever with Phalanx to keep your souls from the last playthrough, pretty tough with how much the difficulty increases. All the Dark Souls difficulty level increases are manageable, but Demon's NG+ is brutal

I gave up on a new play through for now. I might get that itch in the future though. Who knows
