Whats the best oil for cooking?

Normally i use olive oil, but this guide i got said olive oil gives off smoke and leaves a burning taste...

I've been told to use vegetable rapeseed oil for frying and cooking.

Sunseed oil is a bit more resistant to high temps than olive oil and neutral in taste. Rapeseed generally still has a bit of that nasty flavor in my experience. We use olive oil for lower temps and whenever the flavour is appropriate, and sunseed for higher temps and if neutral flavor is required.

Use extra light olive oil to fry or sautee. Extra virgin isn't for cooking in a pan.

I use butter or light/extra light olive oil. And peanut oil for deep frying. That's the only oil I ever keep on hand. Besides extra virgin olive oil for salad dressing

I use peanut oil for general purpose.

Of course other oils have other applications. Olive oil is good if it's going to contribute to the flavour, and it doesn't get too hot: new york style pizza sauce, slow cooked mushrooms, etc.

Butter works best for low temperature cooking of a lot of things that would benefit from the butter flavour; mushrooms for toast, pancakes, almonds, etc.

Lard is excellent for high temperature cooking, and for quickbreads you cook in the pan: crumpets, chips,fried chicke, etc.

Other oils are more ecconomical. I like to use peanut oil for deep frying, but because it's so expensive where I live I often use Sunflower oil instead.

TL;DR: Match the oil to the application.

I don't know what best means to you but the healthiest choices for cooking are coconut oil/butter and gee (clarified butter). Also animal fats are superior to any vegetal oils. Olive oil is good only raw.

Sunflower seed oil has a high cooking temperature, it has a neutral flavor, and it is really light. Do not use coconut oil for cooking.

Sunflower oil is very high in omega 6.
Rafined coconut oil has the highest cooking temperature and no flavor.

Refined oils don't have all the minerals and vitamins intact.

"Olive oil for almost everything"-User here.
To be more specific: Extra native oil from greek island Crete.
I never had a bad/burn/bitter taste even with frying at high temperature, i don't know what all the fuss is about.
No matter what, it always works out fine, from pilaf to salads to roux.

Only for sweet stuff like pancakes or where the Olive oil taste doesn't fit like asian dishes i use tasteless rapeseed oil.

Well, of course i don't cook on master chef level, but i do have my standard.

edit: to those coconut-oil enthusiasts - doesn't the dominant taste bother you - or the high amount of saturated fats?

I think if one is using refined oil, which is basically all cooking oil unless it's organic or specifically unrefined, has probably been heated so god damn high during the manufacturing process that it probably doesn't really matter what temperature you cook it at. I can totally see how unrefined oils burn more easily.

As for coconut oil, I like it in my rice. I'll do 1 tbsp of coconut oil and 1 tbsp of sunflower seed oil for every 2 cups of rice. It makes my black rice taste YUM. But other than that, I don't understand these people who are obsessed with coconut oil in everything. I wouldn't want everything to taste like coconut.

I use coconut oil for general purpose cooking.  For frying food at higher temperatures, I recommend peanut oil.
