Absolutely, my gf and I both prefer sourdough over yeast bread, except for things like pizza and naan. But for regular bread, my current recipe is 66% white wheat flour and 34% whole meal rye. Let sit overnight to ferment. High water content too, around 85%.

I second the sourdough over yeast for pizza. Multiple nights a week for me. It's become as much of a staple as rice :lol:

Acetic acid production is minimized by raising the dough in the refrigerator overnight.  In the cold temps, acetic production is minimized and lactic acid is dominant, therefore you have a less sour tasting bread.

I have been using sourdough for years...pizza crust, brownies, breads, english muffins, etc. I use a pizza spice blend in my crust, so I make and freeze single pizza batches in ziplocs. Spice blend really adds to the overall flavor.
