what you need is a 12in fillet knife used for bovine. the width of that knife adds resistance when you slice through the mycelia. A fillet knife will have little to no resistance.

heh I used to slaughter cattle, blood them, and process them into their various pieces for consumption. Hard work, big pay, got shutdown because COVID. I just kinda have all these knives sitting around, sharp as diamond, big enough for bovine. One slice across my sub and its done son triple six on the run.

You probably have the 2mm version if you payed around 30.00 dollars.
One problem could be not enough wattage to penetrate the 4 layers of plastic of where the sides are folded.
One suggestion is to open the bag past the folds of the sides so you have 2 layers all the way across from left to right. you should be able to seal it with a 12 or more inch sealer. The bag should be 11 inches stretched from end to end. (Unicorn large bag)
I like using plastic tie wraps..

In my experience unicorn 3T bags are about 12.5" with the gussets opened. So to seal this way you'll need the 16". AIE is the only brand to buy. The shitty amazon ones are super trash.

I have been intrigued by this for a while but can't find a whole lot of info. I have heard from others that AIE is the industry standard and that cheap ones are an exercise in futility but not much as to why that is the case. Everyone says they are better quality or just work better but never which parts are better or where the quality is skimped on. DIY shit is my jam! I'll often put into way more work to make my own of something just to learn how and I can make it fit EXACTLY my needs. Any idea what it is that makes the AIE sealers so much better or the amazon sealers so much worse? If it's just a matter of higher rated components often those can be ordered for dirt cheap from wholesaler.
Edit: Right after I posted this, since it was on my mind, I did some more digging and think I am getting closer to an answer. It appears it may have more to do with the logic controller than electrical components. I got plenty of arduinos and Pi's laying around to play with and already spend quite a bit of time playing around with their firmware. That is what I need. My vigor renewed, I will find my answer one way or another.
