Mind's Got a Sweet Tooth - A Candy Cap Sugar Recipe * 1

I've been finding an abundance of candy caps, Lactarius rubidus, lately and have been experimenting with different ways to incorporate them into my food. This idea came from a method my friend showed me on how to make great porcini salt. It's essentially the same method but with  candy caps and sugar, instead of porcinis and salt. It's very simple so here we go!



Candy Cap Sugar!

First, get your candy caps. I used 2 oz fresh for this batch. This recipe is focused on using fresh candy caps but can probably be used with either dried or rehydrated mushrooms.


Put them in an oven safe container. I used a ceramic ramekin this time.


Then cover it all with sugar!!


Heat your oven to a low temperature. I usually use about 300 F.
Once it's heated up, put everything in there! Then check it every 30 minutes for a few hours. Eventually, since I used fresh candy caps, the water will eventually melt the sugar and leave a candy cap soup


Keep it in the oven until all the moisture is gone. This takes a while. This specific batch took around 4 hours till it was no longer moist.

This is around hour 3, it looked almost done, but when I stirred it with a spoon, it was still clearly pliable and had moisture in it.


After everything is dried out, I scooped it out of the ramekin to make sure it was dry.


Once cooled, I threw it into the trusty food processor and ground it up to a powder. I personally like it a little chunky, but it's up to you how fine you want to make it


Then jar it up and use it however you like!


I love it in coffee or pretty much anything that calls for sugar!
