Pseudohydnum gelatinosum collection & candying - Oregon 2

Howdy folks. Just yesterday I went on a trip to collect some Pseudohydnum gelatinosum (cat's tongue jelly fungus) from a nearby park. They grow on downed wood and woody debris, seemingly always under tree cover. They are edible and I read that they can be turned into gummy candies with a bit of work, so I wanted to give it a shot simply because of how weird they are. I haven't seen anybody else on this forum talk about actually eating these, so I wanted to share my experience. Below is a photo of a medium sized specimen.

They are semi-translucent and range from white to light grey. They look and feel like a very hydrated gummy bear, and the underside of the cap feels like a less abrasive cat's tongue. I ate one raw (after rinsing). The texture is... gelatinous. It's like eating flavorless jello that leaves a mild mushroom aftertaste in the back of your throat. Strange, but not bad.
The recipe I found for candying these is pretty simple. You soak them in syrup and then dehydrate them and coat them in powdered sugar if you want to. I managed to find about 200 grams of wet P. gelatinosum. I rinsed them off in clean water and trimmed any questionable or unsightly bits with a paring knife.
  
As they were drying off on some paper towels, I made a simple syrup with 1 cup water, 1 cup sugar, and the juice and zest from one lemon. I brought it to a low boil on my stove and then simmered it for about fifteen minutes. I tossed in the mushrooms after it had cooled down just a bit, and let them soak for about half an hour. I drained the extra syrup off and then transferred them to my food dehydrator. I dehydrated them at 165°F for 2 hours, and then tossed them in powdered sugar and dehydrated them for another 4 hours at 100°F. Voila!
  
They taste good! The lemon is strong enough, they're plenty sweet, and they're nice and chewy.
But honestly? I would not do this again. It was fun to do for the novelty, but they're weird. It's like a mushroom raisin. And I think I should have started off with a lower temperature on the dehydrator, because some of the smaller ones got a bit crispy, and the larger ones turned into this weird sticky hot mess that I had to peel off of the dehydrator tray. But I made mushroom candy!

I've made candies from them a number of times. Real good party trick there. There is also an undescribed species that grows directly on logs that gets much bigger than the real pseudohydnum. Using a syrup, or in my case juice, that's a dark color is a good move. It dyes them in a way that makes them look more like candies. I also paint mine with honey and then roll in sugar with large granules. For some extra fun drop a hit of lsd on them and see how your friends react. Jk always tell your friends if you've dosed the pseudohydnum.

If only I had LSD to dose them with. I'll have to try the juice trick. I thought about adding some strawberries to the syrup to give it some color but decided against it.

Finding candy caps in the wild can be tough due to the fact that there are so many red Lactarius species out there, but once you get to know it, you realize they can be all over the place! (obviously depending on where you live)
Tip: if you find a suspected candy cap, obviously smell it first, and if it's hard to tell if it smells like maple syrup, burn the cap a little to dry it. If it's a true candy cap, it will smell very sweet! I just recently made some candy cap syrup, sugar, and am about to make another batch of candy cap beer! The batch from last year was oh so delicious and was drunk wayyyy too quick haha

It's a shame that candy caps are mycorrhizal, I bet candy cap beer would be a hit!!!

Oh it’s a hit indeed! Candy caps go great in a stout!
Yes being able to grow candy caps would be amazing, but there’s something about the hunt that makes it so great! I’ve been finding so many this year it’s been fantastic, even though this has been a crappy mushroom season overall
I’m not 100% sure on their distribution but do they grow out your way Doc? I’m thinking they are a west coast thing but don’t quote me on that

Also, how much candy caps are you planning on using? My last batch I used 2 oz dried, but that ended up being more than I needed. It definitely wasn't too much but I'm sure you know just how strong that flavor can be.

Yes, the primary fermentation will be done in a week or two. Then it'll go into secondary with the candy caps. Should have a beer by late February early March!
