Pasterurizing Casing in bags in PC

Usually I load up bags of sub or casing and pasteurize them in my steam box. But it takes awhile and I like to run full loads if I'm going through the trouble. I don't want to use quart jars because I need way more casing. Takes way too long to bring a full bag of casing up to temp just in boiling water. Anyone have any inferences on bringing bags up to pressure for a small amount of time? If only I could get a wireless temp probe. Any opinions? Or should I just not care about casing pasteurizing if my sub is fully colonized. I'm only going this route because I'm not getting pinning on my fully colonized subs right now other than like 1 small cluster. I'm used to full canopies or at least pins spread through the whole sub.

Yes surface conditions are right. Small beads on surface. Sides of bins look right, evap looks right around holes. I'm playing with some different size bins, but was having full canopies over the summer with same set up and genetics. Temps were much higher and evap was much more pronounced. So I think a casing is needed right now for this time of year.

What are you using for Substrate? Can you pasteurize with a wire feed temp probe that you put in the middle of the bag and leave the lid off?

I'm sure you could use a PC but I would think that is going to require a lot of trial and error to get it right. I use a sous vide and it is set and forget plus you can use a pretty good size container to fit a lot of bags/jars of casing. I always thought about using a bathtub or something big and I recently saw a post where someone did just that.
