Dont put them in the freezer you can cold shock them in the fridge your temps sounds good and there really isnt a reason to cold shock cubes. How often do you exchange the air them kind of coolers really seal up tight

Ya dont ever put them in the freezer. The fridge is fine.

High CO2 induces pinning, doesnt it? Dont fan at all untill you see some pins.

Nope, you got it mixed up! High co2 is needed during the colonization of the substrate. Decreased co2,lack of nutrients to consume, and the addition of light are factors in starting the pinning stage. The casing layer not only gives additional water while growing, but also makes the pinning process begin a little faster IMHO. It is kinda like going from 24hrs of light a day with herb to 12hrs a day. The rapid change kinda shocks them into pinning in much the same way. THe casing layer holds the co2 levels high on the surface of the substrate until the myc evenly breaks through and gets a big blast of fresh oxygen.

Keep the temps at 72 to 76. Humidity is fine.

I?ve seen cakes take up to two weeks to pin.

Cold shocking does help a little to start pinning. I did 90 cakes and shocked 45 of them. Everyone of the shocked cakes beat out the unshocked ones, but it was only by a day or so.

Now the most common reason cakes take a long time to pin.

They need three things to start pinning. Light, air exchange, and a lack of substrate to colonize. Sure they can start with only light or we wouldn?t have the "why are they pinning in the jar" posts.
What people do is birth the cakes as soon as the outside of the cake is finished and then wonder why it isn?t pinning in 30 minutes after they put it in. What is happening is the myc is colonizing the cake center of the cake.

When the outside of the cake finishes wait a week then birth them. You?ll notice much faster pinning.

Put something between the cakes and the perlite if there isn't anything there.
