Although the results are not that impressive at all, I'm quite stoked about this and feel a need to share:
A friend of mine found a wild Hericium Coralloides this fall. Since it is quite rare in my area I got real exited and took a small piece for cloning right away.
After reaching a clean healthy culture on LME agar, a LC of 2% LME was brewed up. It was noticed that this mushroom/mycelium really thrives on being agitated, keeping the LC moving around greatly increased colonization speeds.
After about 15 days the LC was injected in to rye berry spawn, which was left to colonize at 24 degrees celsius. Full colonization was reached in about 3 weeks, at which point the rye jars started to fruit little tiny mushrooms (cute) inside already.
The jars were then used to bulk to beech wood chips/dust. This bulk substrate was pasturized in spawnbags (2). Supplemented woodchips (with wheatbran or soy husks) would probably work even better, but these need to be sterilized. As I don't own an impuls sealer (making the steriliziation in bags much harder) I chose to use non supplemented substrate.
Colonization went fast, and fruiting even happend before all the substrate seemend colonized. As soon as fruiting happend a few holes were cut at the sites of the fruits, and the bags were put in a greenhouse with RH ~90% and frequent FAE. Temprature was kept at around 20 degrees celsius. After 2 days:

Ate them yesterday, substituting crab in crabcakes with the shroom. Really tasty! Sorry for the shameless brag but I'm just really excited...

btw you can substitute zip ties for the impulse sealer if you choose to do sterilization in the future.

Yeah I read and tried that before, but my filterpatch is so close to the edge of the bag that I can't tie it without damaging the filter :/ Thanks for thinking along though!

Nice! I love hericium spp. Never tried to actually eat coralloides, but they grow wild like crazy in my area. I hunt them all the time for tincturing. How's the texture? Seems like an odd one for eating.

For the second flush I removed all plastic from the top of the bag. As been noted before by others, and now also by me this causes more but smaller fruits to form.
 I don´t know if it differs in total yield. Might be a fun experiment. Got my next bag innoculating:
 I also added some larger soaked beech chips to this sub. Going to fold the bag over the cake this time when fruiting. Only making some small cuts at primordia sites apperently increases fruit size. More bags are in the making!

Can't help but post more... This fungus got me hooked! Got a nice thick LC running now, that colonizes rye in under 12 days, leaving a nice and dense healthy looking mycelium.
 I also made a slight adjustment to my fruiting process. Where as before I tried to make a small hole where primordia formed, I now just make a very thin slit at sites where the mycelium is very dense and white. This seems to result in compacter but still bigger fruits.
 This one is about 5 days in to fruiting after making the slit. In it´s `natural` habitat:

Anyone out there experienced with taking a spore print from Hericium spp.? I would like to add this one to the spore bank.

Another small update:
Found that it is even possible to fruit the mushrooms from jars you inoculate in, as long as some type of wooden substrate is present. These 2 jars are on dowels and chips:

 Quite easy compared to bags! Still got bags going too though:

 Friends and family are quite content with the free shroomies!

I bet it'd be hard to get a good spore print from these, but maybe you could try taking a swab with a sterile Q-tip and seeing if you can get germination on agar with that.

They usually spore a LOT, you could probably just wrap foil around one of the arms and get a bunch if you wanted spores.

When they're fully formed (whenever that is )
I find them in the forest all the time, you can often see a massive dusting of spores all around where they are.
