PF-Tek| Checking for drying substrate/Adding water to previously inoculated and incubating jars?

Hi everyone.

This is my first time delving into the world of mushroom cultivation and my first time posting on here after lurking for some time (please bare with me if I get a few things wrong).

It has been approx 6 days since I inoculated 6 500ml jars containing a substrate of fairly fine vermiculite and organic brown rice flour misted with water (2:1:1) with about 1.5 - 2ml of golden teacher spore solution in each. I did not pack the jars at all so each jar does not contain the full 500ml of substrate (I would say about a half to 3 quarters of the amount is actually in the jars, quite hard to tell as I mixed the substrate in bigger batches). I have kept them at around 75F - 80F, sometimes reaching lows of 60F on colder nights. I am keeping them in a previously sterilized plastic box with the lid ajar for airflow and storing this box in a dark cupboard in which I occasionally open for fresh air.

Today I am starting to see the very first signs of white mycelium formation on the walls of some of the jars which I believe is a good sign, but I am also starting to worry that the substrate may be drying out. There was a small quantity of condensation on the inside of some jars after sterilizing in a pot for 2 hours, but this has since dissipated perhaps due to the 3 pinholes in the lid of each jar just smaller than the circumference of a grain of rice. Looking at it now I can hardly see much (if any) water on the walls of the jars.

Does anyone have a method of determining whether the substrate is drying out? Perhaps any good indicators from personal experience that it is doing so? I have a humidity monitor but it is too large to fit within the actual jars for an accurate reading.

Secondary to this, if it does turn out to be too dry, what can be done to remedy this? My first thought would be to open up the jars and mist a bit of water in the top but I fear contamination in doing so at this early stage, others on here have also said that too much humidity during colonization attracts contaminants more. On the other hand, if I just leave it, the lack of water may stunt or cease further development of the organisms, so I find myself at an impasse, therefore I am looking for advice.
