tubs getting dry in the middle during colonizing and right moisture for rye

Hi all. I'm pretty bummed about multiple contaminated tubs and continue to try my hand at this hoping to get better and better despite the failure, maybe picking up advice along the way that will change my luck. As I have seen on multiple posts, my first attempt was a great success and now disaster after disaster with maybe one or two fruits total every cycle of grows, the rest contaminated. My current issues/questions are 1) I put my field capacity substrate in my mono tubs, mix with spawn, cover up, wait about ten days with no air, just gas exchange poly holes or micropore taped holes but then see that the tubs are not colonizing and on many of the tubs when I open the lid out of frustration to see wtf my tubs have dried out in the center or, they start to turn white and get little white tendrils speckling the surface and I think things are going well but the colonization never progresses. The surface stays a speckled white but the process doesn't develop into full surface colonization and eventually seem to get taken over by cobweb My tubs are about 12 x 16 inches but I'm only using an equal mixture of one grain jar to equal amount substrate so my tubs are never very thick. Could this be why some are drying out before colonizing or starting to colonize but then stopping? 2) I have inoculated rye jars that I have mixed with a cup of coffee and tablespoon of rye and pc'd but nothing happens even though I can see the spores in the syringe so know they are going in. I'm wondering if I might be drying my rye too much before loading them into my jars to pc. I really wait until they are very dry to the touch because I've read all the moisture is inside the grains and that's all the spores need and have experienced contamination of jars when my bird seed was probably too moist when loaded up into the jars. 3) the few fruits of PE I got from multiple tubs were very short/little. Is this strain supposed to be tiny? (about an inch full grown)
I colonize my jars in a barrister bookcase in which I have placed some string lights for a bit of warmth as the bookcase is close to the outside cold wall. Despite this though, many strains I have tried take several weeks to colonize when they end up doing so
also had a lot of cobweb issues and though I read here the idea that this might be due to lack of FAE, I thought there wasn't supposed to be any FAE during colonization, just gas exchange
My only successful cultivation, back in July, was just coco coir. I have been using coco and verm lately as recommended but wonder if the verm is drying out my substrates.
any thoughts on why I'm having problems greatly appreciated!

Spores is a gamble anytime you use it as an inoculant for spawn. Theres no need to suffocate tubs you can leave them to fruit right away and do great, anything between 2 to 4 inches of substrate will do just fine just dont have fans blowing directly at them. If you plan to make a hobby out of it agar is the first and final step

And what about my rye jars? Maybe I dried the rye too much after hydrating as the spores don't seem to be colonizing the jars at all. strain is Cambodian
