question about incubation stage with BRF 1

i have followed the updated BRF tek(s) here and am about two weeks in on 16 1/2 pint mason jars. i've only done injection port bags -> monotub before, so i'm new to this process.
at 2 weeks they are in very different states of progress despite my rotating them daily to try and average out any temperature variations.
my question is, once fully colonized, how long they will "stay good" inside the sealed mason jars? i'd like to wait until all 16 are ready before moving on to birthing and soaking...
if the fastest is fully colonized, say, a week before the slowest is, am i risking losing the fast one by waiting to birth it?

They will stay good for weeks , after a few days get them somewhere cooler to stop them from pinning invitro.

There have been a few experiments here that also suggest much more potent fruits when jars have been left to consolidate for extended periods of time. You're totally fine to leave them in the jars while the others catch up.
