Grain Jars stalling at the first hurdle

Am I right in thinking that my grain jars have stalled and smell vinegary because I left them for 4 days without inoculating?
Whats the max time one can leave jars without inoculation, fridge and not in fridge.

If they are properly prepped and sterilized they should last many days without refrigeration. I'm not entirely sure of the shelf life but I have on many occasions waited days even a week before inoculating my rye grain without any problems.
If it's looking fowl its much more likely do to bad prep, too much water, overcooked, etc. IMO

You're the only one that can say if they smell like vinegar Also....how would you know unless you opened one? If you have opened one and it smells like vinegar then that's obviously bad.
They last much longer than 4 days. As stated above, you fucked up somewhere. Probably your lids.

I routinely keep them for weeks in jars with SFDs after PCing. There is no reason to put them in the fridge if they are sterile and the lids work correctly.

I have prepped rye from nearly 7 months ago thats just dried back out. No contams germinated on it. I wouldnt use it for spawn anymore but it says something. Stroke of luck you didnt use them immediately and think it was your inoculation.

I’m starting to think I didn’t sterilise them long enough. No contams, they were inoculated on the 27th of Nov just smell vinegary through the micropore tape

Innit that a sign of contamination? Pressure cooked grain shouldn't smell like vinegar.

In fact you should leave them out so if you did mess your prep up the contams take hold faster and you know not to use the jars.
