What type of contamination is this, and how do I prevent it?

Hi everyone,

I'm fascinated by mushrooms! I closely followed this guy's process:


However, my first two attempts failed...both ended up being contaminated. Please help?

Referring to the image attached:

[1] I first sterilised the jar (containing organic brown rice flour mixed with vermiculite, and a thin layer of vermiculite on the top) in a pressure cooker for 2 hours. I then inoculated it (through poked holes on the jar's cover) with a sterilised syringe (putting it under a flame and wearing gloves), and kept it in a cupboard for ~14 days. NOTE: when it was still in the jar, I noticed water droplets forming. Is this okay?
[2] I dunked it in water for 1 night and kept a plate over it to keep it relatively sealed
[3] I took it out of the water, and covered its surface with vermiculite (unsterilized)
[4] I kept it in a shotgun fruiting chamber I made (and sterilised with alcohol beforehand), and misted it couple times a day, keeping the humidity at a consistent 95-99%. Temperate was room temperature; this was during the summer, so around 19-23 degrees.
[5] A strange fluff appears, as shown; I assume this is mould and not the mycelium
[6] After several days, and continued misting, black spots appear

Its mycelium. The blue spots you see is bruising, probably from stress due to large droplets with high velocity.
The frothy mycelium ime is due to bacteria or overmisting. This is further supported by the antenna like mycelium to the sides of the cake. It seems your fae is too low in the fruiting chamber. Which tek are you following? (SGFCs are normally filled with perlite, i see you have used vermiculite, while verm holds more water than perlite, it has poorer evaporation)

Cut the foil to size of the cakes and up the fae. If you overmist, dont do that, only water as much as needed until the surface is mildly glistening.

Edit: That's not an SGFC. It will have inadequate FAE. Your mycelium is suffocating.

A couple of additions:

1) Make a proper SGFC, as linked above by Phony Phone. Don't make any modifications or create your own FC unless you understand mycology and biology thoroughly (or, at the very least, are an experienced grower).

2) Don't inoculate just one cake. If all of your attempts were lost to contamination, you either had contaminated inoculant or you had improper sterile technique. But if you just made one cake each on your previous two attempts, it'll be hard to diagnose what's going on.

Assuming you're using a spore syringe, you can inoculate 10+ half pint jars easily. And a proper SGFC benefits from having many cakes in it.

3) Post pictures here of this "black spot" contamination that you seem to get shortly after birthing. It can be something "harmless" like bruising which you are misidentifying.

If you find the SGFC too much of a PITA and headache, make yourself a humidity chamber. It's efficient and simple.

Hi Phony Phone,  I used organic brown rice flour and vermiculite. Okay - noted, I will buy perlite and create a new fruiting chamber following the link you shared. Thank you!

Thanks Socrateshroom, I will also create more than one next time.

I left it in the box for almost 10 days; there wasn't any sign of progress, so I assumed it just "died"? Was I wrong? How many days does it usually take?

Its not dead for sure. It's just fruited in suboptimal conditions.
Check this thread.
You need to provide it with FAE, proper surface conditions and light in the 6500 K for 12 on 12 off hours.
Acceptable Range of temps for fruiting is between 68-75 F.
