Food. I need to vent a little.

This year, for various reasons, I've been cooking a lot more. Been reading a bunch of cookbooks, books about cooking in general, and even some history of food. I'm sorry to say that I've found it all very depressing because I've become very aware of how empty the food culture of my country is, especially my state. There is no history, no roots, to me it just looks like a business, with everything ready to throw in the microwave. Seasonal and local foods are nowhere to be found around here. The seasons don't seem to matter, it's the same food all year round. Maybe...I'm being a little dramatic to get my point across. But whenever I read some classic cooking from another country with thousands of years of history behind it, I am faced with this hollowness. It makes me sad and it makes me angry. My cooking lately has been filled with a violent reaction to the blandness of the food I've grown up with. There is a revolution on my palate, my friends.

I don't know what state you are in, but I can give you two Youtube recommendations for US food.

Townsends; Traditional American food, specifically from the English colonies. Most of the things cooked on this channel are English foods (I always found it fun how he'll be like "I found this in a 400 year old cook book!" but it's exactly what my grandma would have made for dinner if she was visiting) but it does also delve into how those foods evolved to fit the climate and local crop conditions of the Americas, and early versions of modern American home cooking staples.

Cowboy Kent Rollins; modern American traditional food. Mostly recipes from the second half of the 20th century, and the modern incarnations of such. Lots of home-cooking version of American fast food favourites of the last 50 or so year. Has an emphasis on 'flyover' and 'deep south' cookery styles.
I don't know any other American cookery things personally, but I'm sure you could find something relatively specific to your state if you knew what to look for.

I am from canada so its a little diffeeent btthe thing about our countries that make it rich from a food stand point is that we have all these fusions. Then you look at the individual cultues and make it your own. We are on the cutting edge my friend. Do not dispair!

Hi! If you want to experience excellent food try:
- Finding an authentic Jamaican restaurant that has excellent ratings and hungry customers. Try the jerk chocken, brown stew chicken, Escovitch fish, Ackee and saltfish, dumplings, and beef patties first.
- Finding a Texas Brisket restaurant. Search Google Maps for "brisket"
- Try your Vegan and Vegetarian local restaurants and be prepared to be picky and customize your order with eloquence.
- An authentic, classy Italian restaurant serving Spaghetti Bolognesa with garlic bread and an Italian salad.
- A middle eastern restaurant serving lamb shawarma.
Remember----most people do not know how to cook. That includes lots and lots of restaurants. You have to hunt for a good meal in some cities.

Big city USA allows you to eat any food from any season at any time. Other cultures' food, our version of other cultures' food, and our own food. I can eat eggs for breakfast, a gyro for lunch, and vegetarian udipi for dinner without driving more than 5mins away from my place

USA is only like 3-400? years old. You're not going to find an american recipe book dating back thousands of years.
But when I think american food, I can only think of fast food. I grew up in a spanish home and I have no idea what americans actually eat.

yeah i feel you pal. thats a lot like where i grew up. mostly pizza places and italian restaurants, save for all the fast food places.. but no real cultural places. you have to live closer to major cities to have more options. i live downtown in a small city and just a walk in any direction i have authentic greek, vietnamese, italian, sushi, etc.
